Breakfast was always my ‘thing’ and not because it was the most important meal of the day. I just liked making breakfast.
It was economical and healthier than giving my kids the same thing in a box all laden with preservatives and other ingredients that no one can pronounce.
Monday through Thursday or Friday, we had either oatmeal or something made with eggs. I bought a 50 pound sack of oats and cooked them up.
I had to be careful not to give my children too much sugar and so we ate it without all the bells and whistles. I was well aware of the roller coaster sugar did in the bloodstream and how that affected learning and behavior. I ate it without sugar too.
When our chickens had eggs, we had eggs. The funny thing was that as a child, I hated eggs cooked ‘hard.’ They wanted them that way. Go figure.
On Fridays, Saturdays, or Sundays, I made waffles, pancakes, French toast or some other creation. It usually took me an hour to make breakfast for everyone on the weekend. It made oatmeal sound so much easier.
Hardly ever. It was too expensive. I could feed everyone for a couple months on the oats.
I also have always thought that there was far too much sugar in cereal. Sure it is easier for mom, but the health benefits far outweigh the time spent creating a yummy breakfast.
Making a List of 10 Breakfasts
My brain goes dead with the business of the morning when children are asking me a million questions at once.
Having a list of my favorite ‘go to’ recipes was a good thing! – This was wonderful to make. Go down the list of ingredients and dump them in a bowl, mix, and put the mix into a dish and into the oven it goes. My recipe wasn’t originally from Taste of Home but it is exactly the same as I made for years.
These are all my recipes or ones that are exactly the same from Betty Crocker or Taste of Home. I have used my own pictures or those used with the recipe on the website for the recipe I am sharing. - Basic Whole Wheat Pancakes – I have made this with whole wheat flour that I ground or just unbleached white flour. Both work.
- Belgium Waffles – I often ground rice or millet into flour for the crunch. I rarely made these with completely unbleached white flour. There are sorts of variations in the flour you choose. These were a favorite and until my kids got older than 15 or so, they would snack on them later or take one from the freezer and pop it into the toaster.
- Breakfast Wraps – I made these long before I found a similar recipe in Betty Crocker. I loved these most of all the breakfasts I made!! These are made with Prairie Gold grain that I ground with my mill. I think the topping is raspberries that I made into preserves.
- Scones – My kids LOVED LOVED LOVED these!! This is when we totally forgot about sugar and just baked them anyways!! I found this recipe in a cook book I bought at a historical fort. I would make these for breakfast, to go with soup, or in the middle of the homeschool day. Don’t feel too bad that we ate oatmeal without sugar.
- Mountain Pancakes – These are so easy to make on a busy day. You mix the ingredients and then pour it into a 13 X 9 inch pan and slide it into the oven. In just a few minutes you take them out to eat. When they first come out of the oven, they are mounded up like a mountain. We ate these with maple syrup. Again, the sugar thing thrown out the window!! (Sorry, no picture)
- Homemade Whole Wheat Bread – What goes better with oatmeal or eggs than homemade bread with homemade preserves? I made bread for many years after finding this worked best to offset my son’s active nature. It is always better to put your own ingredients into things you cook than to rely on what the manufacturer includes. Whole wheat mixed with some unbleached flour, or the light Prairie Gold grain ground into flour used entirely all was better back in the day when no one ever thought about needing to go gluten free!!
- Mom’s Homemade Muffins – I made these for breakfast with raisins and cinnamon sugar sprinkled on top and added to the ingredients. I made them for supper with herbs or nuts. They were especially yummy fresh out of the oven. No one liked them as much when they were a few hours old. That is what happens when you are used to homemade-from-scratch-cooking!!
- Fruity Oatmeal – This is a better way of making oatmeal thanks to Taste of Home!! If I wasn’t so overwhelmed and exhausted I might have been a better mom and tried something better.
- Eggs – Scrambled eggs, eggs over easy, eggs sunny-side up, omelettes, you name it, eggs can come in all sorts of different ways!!
So there you have it. My list of 10 Breakfasts
